Former Kingham Plough team to open seafood restaurant in Cheltenham

The FINANCIAL -- The former head chef and restaurant manager from the Kingham Plough pub in Oxfordshire are opening their first restaurant, in Cheltenham, this month.

Gareth Fulford and Stephanie Ronssin will open the Purslane restaurant on 20 July, serving a menu with a big focus on seafood. As Caterer and Hotelkeeper reported, the 34-seat restaurant in the centre of Cheltenham is housed in the space formerly occupied by Italian restaurant La Capannella.

Fulford spent five years at the Kingham Plough, while Ronssin previously worked at the two-Michelin-starred Champignon Sauvage.

Fulford's menu will focus on sustainably caught fish from the British Isles next to locally sourced produce from the Cotswolds. Typically dishes will include pressed terrine of Wye Valley duck, Cheltenham beets, duck liver parfait and gingerbread crisp; grilled Cornish gurnard, Evesham Vale heritage tomatoes, sea spinach and potato gnocchi; and vanilla-poached Gloucestershire apricots, natural yogurt mousse and home-made granola. The average spend will be £28 per head.

Commenting on the launch of Purslane, the chef said: "I knew I wanted to be a chef and own my own restaurant when I was 10 years old. I started off as a commis chef in a local pub and worked my way up to regularly cooking for the Royal Box at Epsom, Sandown and Newbury Racecourses and catering events for celebrities and notaries.

"I settled in Cheltenham when I met my wife and spent five years at the Kingham Plough. Once we started a family it was a case of now or never for the restaurant. So, 24 years after deciding to be come a chef, my dream has finally become a reality and I'm hugely excited."
