The FINANCIAL — Double Michelin-starred chef Claude Bosi and his brother Cedric are set to open their second pub – the Malt House in Fulham – in February.
Currently undergoing a £750,000 refurbishment, the pub was bought earlier this year by Brakspear from Spirit Group and will be run by Bosi's Jolly Fine Restaurants, which also operates the two-Michelin starred Hibiscus restaurant in Mayfair and the Fox & Grapes gastropub in Wimbledon.
The Malt House, which will serve modern, seasonal British pub food, will be headed up by Marcus McGuiness, who is the former head chef at Hibiscus.
Its menu will feature a selection of bar snacks such as Welsh rarebit with rhubarb chutney. As Caterer and Hotelkeeper reported, starters will include crab gratin, white port and seabuckthorn, while main dishes will feature short ribs of beef, pickled red cabbage and horseradish or pollock, pumpkin, winter savoury and red wine, as well as traditional favourites such as rib eye steak and shoulder of lamb.
Average spend per head will be £27 for three courses.
London based Alexander Waterworth Interiors will ensure the 18th century pub will retain its local pub feel, as well as update the exterior space and eight bedrooms.
