The FINANCIAL — The restaurants at Radisson Blu Iveria Hotel are refreshing their menus. Peter Kaufmann, the new Chef at the hotel, says that many new, fresh and delicious dishes will soon be on offer.
Restaurant Filini, famous for its Italian pizza, has teamed up with Coca-Cola to present special promotional offers.
“We now have special take-away boxes for our pizzas. Everyone who buys a pizza will get Coca-Cola for free. This deal will be available throughout the summer. I think it’s a good offer for office workers or people who are not staying at our hotel as guests, but are our neighbours,” Kaufmann said.
Peter Kaufmann is Austrian and has 23 years of experience in cooking.
“I am 38 years old and I am a 23 year old cook. During these 23 years I have been an Executive Chef for 8 years. I have been working for the company Radisson for four years already. Before the Radisson I worked in many other hotels like the Marriott and many others. I have travelled around the world and have significant experience in the business,” he said.
“I am very content with being a cook,” Kaufmann said.
“I started working in Georgia at the Radisson Blu Iveria Hotel one month ago. I hadn’t visited this country before but I can see that it’s a really special place. Before visiting Georgia I worked in Azerbaijan, at the Baku Radisson Blu hotel, and in the Astana Radisson Blu, where I cooked for countries’ presidents and many high profile people including President Nazerbaev, Putin, Medvedev, Angela Merkel, Hillary Clinton and many others,” Kaufmann said.
“I can cook in many different styles, in the style of French cuisine, Italian, East Asian, Mediterranean, Mexican and American. For me personally, the same as for many cooks around the world, my favourite cuisine is French as it is truly classic. My native, Austrian cuisine is also very tasty. We are very famous for our cuisine,” Kaufmann said.
“I have tasted a variety of Georgian cuisine and I think it focuses on more classic food, like what we have in Austria. It’s the first time that I have been in Georgia but I have visited 3 different restaurants here and been surprised by the rich culture. I had the pleasure of spending a weekend at a nice wedding ceremony in Georgia in one of the restaurants where the food was really very tasty. I was very impressed by the array of wedding dishes,” Kaufmann said.
He believes that the most important aspect of his job is to keep guests happy.
“First of all you should find a good solution for each person. It’s generally better to provide lighter dishes for women, whereas men prefer to eat meat. Women like salads and some fish. It’s really good to find a mix of local and international food combined in some light dishes. We pay much attention to the quality of food and in our view we have a policy of Fair quality, Fair price,” Kaufmann said.
“For summer its best to offer many different styles of salads, including green salads, Mediterranean salads with different ingredients including olive oil, fresh raspberry, a little bit of sugar, salt and garlic. You can quickly prepare easy but very tasty classic salads. We will offer a variety of salads to our guests at Filini as well as in our other outlets, like our renovated Iveria Terrace. We may offer our clients steak grills with nice herb butter. In winter its best to have soups including garlic and potato. People can enjoy the highest quality Italian pizza at the Radison’s Filini restaurant,” Kaufmann said.
Filini is a contemporary Italian bar and restaurant. The service, the design and the mood give Filini a sense of Italian style that complements the wonderful and simple food. The wine, the bar and the music all make Filini a truly contemporary Italian experience.
“Ordering our pizza means tasting very Italian cuisine. We have some of the best mozzarella in town and we always have very fresh ingredients for our dishes. I think one of the most important things about the hotel, actually our “Big Baby”, is our renovated Terrace. There is a great panorama there from which people can see the whole of Tbilisi,” Kaufmann told The FINANCIAL.
“We have nice local food, including Shashlik and many other dishes. When you sit at the Terrace you feel as if you are sitting right in the middle of Tbilisi. Offering local dishes and international food at the same time will be a good concept for our guests. At the Terrace we will have 90% local food according to people’s demands. Also we will offer them the same menu we have in our Filini restaurant so they can even enjoy pizza at Iveria Terrace as well,” Kaufmann said.
“We are going to change our cake menu slightly. We will be offering a cake service to families celebrating birthdays, weddings and many other events. We will also be preparing some light pastry.
According to Kaufmann, the Radisson Blu Iveria Hotel is going to change its banquet menu completely.
