The FINANCIAL — Former Scottish Chef of the Year Roy Brett has been appointed culinary director at the Loch Fyne Oyster Bar and Restaurant in Argyll.
Brett, chef-proprietor of seafood restaurant Ondine in Edinburgh, has partnered with Loch Fyne Oyster Bar to oversee investment and development of the Loch Fyne business at Cairndow. As Caterer and Hotelkeeper reported, the project will start off with a complete refurbishment of the site, which is due to be completed in the autumn, when Brett's involvement will begin.
"It is an honour to be given the job of evolving and developing one of the great names in Scottish seafood," Brett said.
"Scotland has a worldwide reputation for getting the best out of the sea and I want to build on Loch Fyne's reputation as a shining example of brilliant produce and amazing eating. I will apply the same high standards as I do at Ondine and I'm looking forward to working with the team to make it a great destination for seafood-lovers in the West of Scotland."
Loch Fyne managing director Bruce Davidson added: "We are delighted to welcome Roy as part of the Loch Fyne team. His extensive experience, passion for seafood and success in establishing Ondine as one of Scotland's best restaurants make the partnership between Loch Fyne and Ondine very exciting."
Loch Fyne Oysters was set up in 1978 by entrepreneurs Johnny Noble and Andy Lane. The first restaurant, the Loch Fyne Oyster Bar in Cairndow, opened in 1988. The company moved into employee ownership in 2003. In February this year it was taken over by Scottish Seafood Investments, a joint venture between the Scottish Salmon Company and private equity investor Northern Link, in a seven-figure deal.
