The FINANCIAL — One-Ninety restaurant and The Bar and Alfresco at Four Seasons Hotel Singapore continues its exciting Wines of the World (WOW!) series, each month showcasing highly acclaimed wines from different parts of the world.
Embark on a global wine and culinary adventure as guests have the option of pairing these wines with specially crafted gourmet dinners. Using indigenous ingredients from each country, Executive Chef Bruno Correa promises oenophiles and gourmands a distinctive and unforgettable dining experience.
July celebrates French wines with Viva La France, featuring the summer-perfect Aussières Chardonnay 2009 from Domaine Rothschild. Its fresh harmony of fruity aromas hints of lime and kumquat, making it the perfect pairing for Chef Correa’s flammekeuche (a sour cream tart with onions and smoked bacon) and bisque de crab a l’Americanne, or enjoyed on its own. The red choice is Château des Tourelles 2007 with its earthy blackcurrent undertones and a long finish that enhances both the cotes d’agneau en croute de les herb du jardin (organic herbs with crusted rack of lamb), and the cheese course.
August pairs wines of Germany with traditional dishes such as weisse wurst with potato salad and Bayerish sweet mustard, beef sauerbraten with potato knodel and apple compote, and desserts including apple strudel with vanilla sauce. Featured wines are the Riesling Kabinett 2008 from Dr. Loosen, described as “elegant and racy” and made from grapes picked early in the harvest, and Gewurtztraminer Les Princes Abbes 2007, one of the most renowned reds of the Alsace region.
WOW! heads down under in September with a menu that includes Australia’s famed meats accompanied by seasonal spring produce and COMO wines. From there, it’s off to the Land of the Kiwis, with a broad selection of reds and whites from New Zealand paired with a lively menu. Food and wine lovers may wish to reserve early so as not to miss the banana upside down dome cake with eggnog parfait and mulled wine syrup, among other creative dishes.
