The FINANCIAL — Tsiskvili, the popular and well-known Georgian restaurant, is offering ecologically healthy products to its customers. The restaurant is well known for its original design. Tsiskvili was the first to popularize restaurants having an accent on traditional elements and was designed with customary fundaments. The FINANCIAL interviewed Tsiskvili’s management supervisor Miss Khatuna Maglakelidze.
“Running a successful restaurant business is not an easy task. There are many issues that can arise that must be dealt with immediately.”
“A restaurant must set its strategic direction and style from the very first day of its establishment. The restaurant business belongs to the complicated mastering business category,” says Maglakelidze.  “This business often requires making quick and adequate decisions, which occur from the object’s strategy and desire to be oriented on customer demands. The restaurant business is successful when the management is oriented on creating comfort and cosiness for the customers. Striving towards professional development is very important too.” Â
“In Tsiskvili’s case the location did not play a major role, as the street was not properly developed till 2001. At the site a water mill by Mr. Jumber Maglakelidze was functioning from 1988 till the end of 2001. The idea of founding a restaurant there was born relatively recently. Tsiskvili is a pure Georgian national brand which is full of national Georgian elements. The brand attracts the attention of both local and foreign clients. Tsiskvili restaurant is original with its genial architecture created by architect Mamuka Chkhaidze.”
Miss Maglakelidze says that the management is the key to Tsiskvili’s success, although the friendly environment is created by the well trained staff.
“Tsiskvili employees are friendly to each other, but they never forget to keep their distance. It always creates a positive atmosphere which is reflected in the guests’ positive attitudes towards Tsiskvili restaurant. Only well specialised staff are a guarantee of establishing a fundamentally strong structure. Tsiskvili restaurant offers its customers a lot of services and helps them in organising: business lunches, diplomatic meetings, receptions, anniversaries and general evenings with high European standard services. The restaurant’s employees are all professional and experienced. Good service skills are in direct touch with the comfort of the guest. Tsiskvili’s staff have a basic knowledge of Georgian culture and history, which always helps them with foreign visitors when giving detailed information about the country. The professionalism of the staff also plays a great role which is not in direct touch with the guests.”   Â
Maglakelidze believes that nowadays the population focuses their attention more on ecologically healthy products.
“The restaurant has a special group of professionals which control the quality of imported products. When a restaurant gives ecologically clean products to the customers, it means that the restaurant receives faithfulness in turn from the customers. On its side the clients get a guarantee from the restaurant that s/he is not being provided with dangerous products. I assume that demand on ecologically clean products will only increase in the future. Tsiskvili offers healthy waters such as Borjomi and Nabeghlavi to its clients too.”
“The concept of stability in the services does not exist, as this structure is developing day by day. If you do not want to be left behind you must actively follow the chosen course suggested by international standards. In Tsiskvili’s case we try to offer our clients a service which is close to European standards, which is properly suited to the Georgian traditions and guests’ mentality. It gives Tsiskvili the chance to be adequate at the restaurant business market demand. Creating a menu with direct standards is very important for the restaurant’s development. The menu must be permanently getting updated and a restaurant must always offer a variety of foods.”Â

Miss Maglakelidze says that permanent care of the customers is what makes people want to come back. Interior and exterior design is also very important, as customers are always looking for novelties from you. “At the same time our aim is keep to our chosen course. Tsiskvili restaurant is original with its genial architecture created by architect Mamuka Chkhaidze. He created a very interesting atmosphere. The merge of natural landscape and Georgian soul works very well. The water mill has become the visit card of the restaurant.”
“The restaurant business is one of the most difficult and competitive businesses. Running it correctly means having profits. To succeed in running a restaurant business correctly I can name the following criteria: love of the job, skilful and team-oriented staff, implementation of innovations, constant improvement of service skills and innovations in the interior design side as well. Tsiskvili has been operating on the local market for 5 years already and has already managed to overcome all the difficulties that a serious business encounters. Nothing is impossible if you have the will to succeed.”
